The number keeps increasing among children who are overweight. This is really big concern for many parents nowadays. Ingredients:

one large butternut squash, three big parsnips, two large onions, three thyme stems, olive oil, salt and pepper, six cups of veg stock, apple cider vinegar, optional squash seeds for garnish

Method:

Line a baking tray with foil and heat the oven to 350F.

Skin and chop the onion in half. Do likewise with the parsnip. Leave the squash skin on but cut in half from top to bottom, then remove all seeds from the inside. Place the onion, parsnips and squash into the baking tray, cut side down.

Cover well in the olive oil, add the thyme, salt and pepper and mix well.

Roast the ingredients for 30 minutes. After 30 minutes, turn the parsnips and roast for another 30 minutes.

Remove tray from oven and remove the thyme. Make sure everything has cooked well – check the colour of the onion and parsnips, which should be turning brown, and push a knife into the squash to ensure tenderness. Leave to cool.

Now remove the skin off of the butternut squash. This should be quite easy after the cooking.

Now cut all the vegetables up into small pieces and puree in a blender with the stock. Blend until smooth. You may at this point wish to add some apple cider vinegar, cream and salt and pepper, as you see fit. (I prefer it with the cream, but there’s nothing wrong with not adding anything!)

Garnish with toasted butternut squash seeds and thyme and serve with a thick cut of fresh bread.

Makes 8 – 10 servings

Optional

To roast the seeds of the squash wash them in water, add to a small baking tray with oil, paprika and salt and pepper and roast at 300F for twenty minutes. By this time the seeds should start to turn brown in colour. Leave to cool and then seal them in an air tight container for a week.

A true chocolate lover loves all varieties of chocolate. They will taste test any kind, for the most part. I won’t go for the chocolate covered locusts, though, I do draw a line at that. There is something bitter sweet about dark chocolate. It is bitter when it is pure dark, but still satisfying at  the same time. However a slight intolerance to the sweeteners and milk in it turned me over to the dark side of it, and I found no problem as long as it was in moderation.
